The longest-running and best-known chocolate course that we offer gives you the opportunity to learn about the entire mass production of chocolate, from bean to bar.
Working in our pilot plant, we will show you how different raw materials affect the production process. You will also see how dosing, mixing, two-stage refining and conching connect together. We will explain settings for refiners, how to guide the conching process, and explore ball-mill grinding applications in depth.
You will have the opportunity to put what you learn into practice in our plant. At the end of the course you will have a full understanding of all of the process steps and technology required to create the highest quality chocolate mass, safely and efficiently.
This course is aimed at production specialists, product developers and technologists in the chocolate industry and assumes a basic understanding of chocolate manufacture.

Combining more than 50 years of experience with the different process steps in cocoa and chocolate manufacturing, our experts Stefanie Keller, Ricardo de Gregorio, Erich Staubli, Katharina Stallinger and Tanja Berti will share their expertise with you under the leadership of Stefanie Keller.
